Frequently asked questions
How do I know if a recipe fits another pan?
Compare the base area of the pans. A 9-inch (23 cm) round pan has about 64 square inches, and a 9 × 13 inch pan has 117, so you need about 1.8 times the recipe for the same height.
What about baking time?
With the same batter height, the time changes little. If the batter ends up taller, lower the temperature a little and bake longer; if it is shallower, check earlier.
How do I measure the pan?
Measure the base on the inside, from edge to edge. For tube pans, also enter the diameter of the hole so its area is subtracted.
